About the Author
Gerhard Eisenbrand was born in 1940 in Frankfurt am Main. He studied pharmacy and food chemistry in Freiburg and obtained his doctorate from the Max Planck Institute of Immunobiology in Freiburg. After a research stay at the German Cancer Research Center he habilitated at the University of Stuttgart for the subject Food Chemistry and Environmental Toxicology. Since 1982 he has been Professor of Food Chemistry and Environmental Toxicology at the Technical University of Kaiserslautern and since 1995 Chairman of the Senate Commission for the Assessment of the Health Safety of Food of the Deutsche Forschungsgemeinschaft. Manfred Metzler was born in 1942 in Bamberg. He studied chemistry in Munich and obtained his doctorate from the Max Planck Institute of Biochemistry in Martinsried. His professional career took him first to the pharmaceutical industry after a stay at Texas A & M University and later to the University of Würzburg, where he completed his habilitation in biochemical pharmacology and toxicology. Since 1989 he has held a professorship in food chemistry and environmental toxicology at the University of Karlsruhe. Frank Hennecke was born in 1943 in Wertheim am Main. After graduation to Dr. Ing. iur. at the University of Heidelberg, he was initially head of department at the Ministry of Culture of the state of Rhineland-Palatinate. Since 1985 he has been Head of Unit and since 1991 Deputy Head of the Policy Department of the Ministry for the Environment and Forestry Rhineland-Palatinate in Mainz. In addition, he has a teaching assignment at the Universit '
